Curry Suited to Sns Base?
« on: December 30, 2009, 03:49 PM »
Hi all,

Not posted for a while but have got the 'curry bug' once again and would like to progress things further.

I have made the BE base several times now and whilst originally I loved it, more recently I have found it to be very 'earthy' for want of a better description! And started to become disappointed by the results.

Would really like to try a diffferent base and love the look and simplicity of the Sns base however, would this base be as versatile as the BE? I Usually cook CTM, Balti, madras.

Thanks

The SnS base is another very good one. I've used it for everything from Korma to Vindaloo with no problems. Be sure to use the "SnS July 2008" base, as I think there was an older recipe also posted.

I'd say the SnS base is very well suited to those particular curries, but I wouldn't use it for a korma.

I'm not sure how you are in a position to say that, unless you have tried them all  gazman?  :-\

I make the occasional korma (to satisfy "the others"). For me it comes out fine. If its the tomato content that leads you to say this, I guess I compensate with a higher amount of cream/evap milk.

Hahaha, by my reckoning there are some 120 curry base recipes on this forum....which, in your two months of membership, makes it that you have tried, on average, two of them a day!  :P

Assuming that each makes about 2 litres of curry base - and they probably make a lot more, on average - (i.e. over 240 litres of curry base!) you must either work for Bejams (to freeze it all) or you must be very, very,  VERY fat!  ;D

I can accept that you may feel it is the best base from those that you have tried, but I can't accept that you have tried all of the bases on this forum and are therefore in a position to to assert that it is "the best on here".  ::)
