I do my curries in a wok. It must be one with a single wooden handle extending out from the side of the wok so that you can flip and swirl the wok without splattering all over the kitchen.

I have only used two woks in the last 25 years and the second one is still going strong. Basically I buy a cast iron wok from a local Chinese supermarket at a cost of about ?10. It is not non-stick. You season the wok and as you use it it builds up a "patina", i.e. a coating that is, of itself, non-stick.

The advantages of using a wok are the deep sides to prevent splashes and it really takes on the high heat that make for a good quick curry.

Asda are doing a nice deep sided hard-anodised aluminium skillet at the moment, for around 13 quid. About 10-11" diameter I'd say, thick aluminium, with a riveted on stainless handle.

Chefs' spoons are a fairly standard item that you should be able to pick up anywhere that sells kitchen/house wares.

Aloha one and all, this is my first posting on this lovely site..anyway, some month ago I bought an induction non stick wok.. best thing I ever bought (except for my wife and my BMW cars)  ;D the heat is instantly there and gone, when turned off... can be used for deep frying as well.. I just love it.
The price: around 35 Euros.. dirt cheap for the amount of fun I am getting out of it..

Not sure if allowed to put link here, but you need to click on nearest stockist

http://www.londonwok.com/

These supply my local asian supermarket.

You will need to "season" the wok, the plastic cover tells you how to season the wok. Best if you can get access to a gas ring to season the wok. If you have problems with seasoning wok, let me know .
