I use a set o 5 "Sabatier" knives that I've had for over 30 years now, and I wouldn't change them for the world,  not Even for the most expensive ones,
But the secret of good knives is to keep them sharp

Who said they were from lidl, could be nicked at the same time as the lead off the roof :)

I use a set of meyer analon which were ?100 from john lewis.  They have a rubber grip handle which i prefer to the wooden for ease of grip.  As hot stuff says as long as you have a half decent pair, and keep them sharp then they wil be much of a muchness (first time I have ever written that phrase!!).

My favourite knife has 'George' written on it and cost me just over 3 quid.  ;D

Actually I was quite surprised at how good it turned out to be. Flexible, holds an edge and is easy to sharpen.

Some of those Japanese blades look fantastic but I could never justify the expense, especially with the way my wife treats them. :o

Yes, the Samurai were noted for complaining that every time they had to dispatch yet another unwanted wife it took them two whole days to get the edge back on their Katanas.  Great shame we're no longer allowed to import them : there were some beautiful specimens for sale when I was last in Kyoto (Katanas, that is, not unwanted wives).
