hello and many thx to everyone here.
I attempted making my own curries a few years ago, just couldnt get it right, pretty much turned out as some kinda hot chilli con carnie. So searing once again for an education and im finding this site wonderfull and informative, i feel lucky to have stumbled upon it, sure gonna save me many ruined attempts.
I travel all over the country and to be honest for last 20 years ive had a vindaloo on average once a week. now i want to realy get down to making my own.
One small observation from last year, i havent seen this mentioned on here yet, but sure it is somewhere, but was in the kitchen of an indian takeaway/restaurant a year ago, and i noticed in the store room there were loads of big jars of pataks curry pastes!, im not sure how they were using these in their meals but they were definetly being used somewhere. The curry i have had from them was very BIR type and very pleasant, right colour/texture/heat.
will be having a crack at the pilau rice recipe on here this weekend, think i will try to perfect each part of a good BIR
