Hi everyone

Hi
Love cooking Indian food, have been concentrating on 'authentic' recipes everything from scratch with no base sauces for approx 1 year, various success but am now confident enough to cook curries for guests.
Looking to have a go at BIR style curries as well and im hoping I will find a good source of both styles on here.

will well look fwd to your posts on the authentic recipes. i aim / keep wanting to give it a go. i've got the new KD book and know what i'm going to make but this BIR stuff keeps getting priority.

there's clearly passion for both ways. i must admit the dream lives on of being able to produce restaurant quality on the spur of the moment. i suppose i did that yesterday but it did take all day making base (well 4 hrs). ;D

if you want to cook truly authentic curries of all types log on to www.kingofspice.com after 1st September 2009 and order some of their Traditional Kashmiri Curry Masala. I used the Original version which was free sample in the post, although there are Mild and Extra Hot versions too. This stuff is fanatastic. Its really pungent and full flavoured. I made a chicken curry which was on the free recipe sheet and it was delicious man. Eating it with Naans was very, very enjoyable.
