Joined in august but this is only my second post having messed the first one up a couple of days ago.Been cooking various curries for years but never realised the interest of so many non chefs which makes the site so interesting.Anyway as i said in my firstpost i found a lost video last year whist moving house.This was purchased in 1993 at Birmingham good food show and shows in detail along with commentry on how BIR food was produced in the early years.The video is entitled 'The Balti Kitchen' and shows the making of the Base sauce,Pre cooked chicken.Balti chicken,CTM, Pilau Rice and Nan Bread.The Chefs Name is Sarbajit Singh,does anyone know him? I've put the vid onto dvd and hopefully i can get it on this site.In the meantime i'll try and find time to list the recipe for the base.

hi jaaron firstly welcome to the best bir curry forum on the net ;D yes we have discussed "the balti kitchen" on here in the early days and i'm sure that the recipe for the base sauce is already documented as well. i was sent a copy of the dvd it comes in 3 parts which i have. parts 1&2 are about making and using the base sauce, part 3 is vegatarian dishes. but by all means post away
. as i remember the base ingredients are very similiar to KDs' and made in 2 parts.

Maybe there's more than one of these vids in the series but this one does not include a vegetarian dish.It does however use a two stage base. This vid is now 16 years old and methods/ ingredients have moved on however the simple chicken tikka masala always goes well.
