Hi guys!
« on: November 03, 2008, 02:58 PM »
Hi there,

I have been browsing this forum for a while now but this is my first post!

Some great looking recipies here which I cant wait to try!

The best results I achieved up to now were from the base sauce and curries in 'Kris Dhillion's Curry Secret'  Which I have really enjoyed.  However, these don't quite taste like the curries I get from my local restaurants.  To be honest most of the recipies taste very similar to  :-\

All I want to do is reproduce a curry just like the restaurant!!  ;D

So I have decided I may try the 'Darth' base this week and have a go at the Madras.  I have read good things, but can I expect it to be like a BIR curry or will I be a little disappointed?

My only question though, I dont quite want to make as much as there is, mainly because I only have a 5L pot!  Can I just half the recipie by halving all the ingredients and still use the same cooking times.... is that ok?

I also love chicken tikka Balti's, what is the best recipie to use?

I look forward to your replies,

Cheers

Del

Hey there welcome to the site. I'm pretty new too and tried the Curry Kid base with the Deathphall Madras recipe. As the amounts were a bit wrong I got a nice base with a very bland curry which tasted authentic but wasn't spicy enough.

I am planning on trying the Rajver amounts with the Curry Kid base this week so will let you know how it goes :)

Good luck with your experimenting!

very best wishes to u del - i too started on KD. i got the base pretty good but the bases on the site are definitely better. the KD recipes were/are not good for sure. again the site's recipes are much better although i've not tried as many as i'd like.

i only have a ~4L pot which just about makes do. i've not made darth's but if i was doing it i'd do just as u say 1/2 the ingredients and cook the same.

chicken tikka is either Coriander's (CA's) or Blade's.

I wouldn't entirely disagree with that JerryM but I didn't think they were that bad either, just not quite BIR. However, try this. Wherever she uses garam masala as the spice substitute a good curry powder, for example Rajah Madras, in the same quantity and I think you'll be pleasantly surprised.

will have to dust the book off for sure - the switch suggested by Secret Santa sounds just what was needed and would make a real difference. the use of curry powder alone as the mix powder (spice mix) is well worth looking into given we're aiming for minimal balanced spicing (or i certainly am).
