Which of the site's recipes are BIR standard

just seen a few posts saying just how good some recipes are in terms of tasting just like (near as dam it) BIR.

the ones i've found being CK's CTM, Admins Jalfrezi, rajver madras.

a couple of things puzzling me:

1) how did they get so good
2) are there anymore - please blow your own trumpets

i ask as i tried out a few Bhuna recipes without success and have another batch of base on my mind

I tried Curry Kid's recipe last week and was impressed. Was thinking about trying the Rajver one this week.

I think the LACK of fresh coriander makes a difference too as that was missing from my one last week.

i usually use it straight from frozen (availability compromise) but it's not as good as the fresh.

Jerry, have you tried CK's Lamb Bhuna. I think is great. I usually use chicken in it.

Josh,

must admit i started out on my bhuna quest with CK's (being big fan) and i felt i needed to adjust the cumin down - i need to try this out.

one thing i did pick up that worked well was to crush some coriander seed (1/2 tsp) by spoon and add it to the dish towards the end

Jerry,

Coriander at the end, really? I've found that works well for garam masala, but not so much for cori or cumin. Those to me seem like they need to be well-cooked.

Then again, I grind my own coriander, and it never gets nearly as fine a powder as the stuff in bags. Maybe its a grit factor thing.

Yeah i know - it's not something that i expected to work it certainly wouldn't for cummin. i guess the idea is a sort of seasoning. i would not use too much either.
