pataks kashmiri masalla paste? when + where to use

Hi curry addicts!  ;D Hope you all had a great weekend! Many of us have personally seen pataks kashmiri paste in BIR kitchens (including me), how do you think they use this. My understanding is they use it in the balti dish. But thats as far as my knowledge goes. anyone know if its used for marinade or actually added directly to the balti sauce during cooking? cheers DD

That's a really good question, I too would like to know more about how BIRs use this stuff!

I've got some, but it only goes into PC chix tikka recipe, that CA (I think) posted, it's VERY good by the way.

A further comment:-

I've never been particularly keen on Pataks tandoori paste or their tikka paste, it's not that it's bad, I just don't think they are good; OK perhaps, but not as good as doing it from scratch....

Hi, Adrian, do you know the link for that tikka recipe you mentioned? sounds like a good way to use up my kashmiri paste :)

Many of us have personally seen pataks kashmiri paste in BIR kitchens (including me)

I have seen huge tubs of it in the Indian cash and carry, along with some others. Their Tandoori  paste is there too and their lime pickle. However their curry pastes are not.

I also thought that it was of interest that along with many other spices, there was a noteably high number of Rajah Madras in massive bags, must have been a good 5kg each. I'm always lurking about that place, hoping to spot on the local BIR guys and follow them around...

Hi Bobby, this will make you laugh! I actually brought one of those massive tubs of pataks hot lime pickle and ate the lot in under 1 month! Every curry i made had a huge blob of lime pickle on the side! Man i love that stuff! its really bloddy hot as well! Now, if i see a tub in my local indian grocer, i have to resist temptation, as i know it will be gone in record time!  ;D

Respect! I'm very partial myself but that's a serious dose! Quite a habbit you have there! Good luck finding a support group for lime pickle users ;D!

Bolst's used to do a 'vintage lime pickle', don't know if they still do.  That was very good!  I agree 'though I like pataks lime pickle, although I have not had any for some time!

It's entitled: 'chicken tikka/tandoori illustrated', by Corry Ander, in the Tlkka/tandoori section of starters and side dishes.

I've done this PC version that Corry put up several times now and its VERY good!
