Patak's Curry Paste

Have you ever wondered how a curry using a good base sauce and technique with Pataks curry paste in place of spice mix would turn out? I know I have! So here it is - standard Madras recipe with curry paste added in place of spice mix.

The curry turned out pretty good. Quite similar to just using spice mix, only saltier and with a couple of subtle unwanted flavours. I wouldn't waste my time trying this if I were you, that's what I'm here for ;D Trying the useless crap, so you don't have to! :P

Oddly enough I think the final Madras actually looks really good! That's just plain wierd.

I guess your conclusion is the usual method spices+base+meat is superior?

Yeah, a good spice mix is better than adding the curry paste, although it's not atall bad. Just a bit of a waste of money. One other observation I made was that after adding the paste the curry ended up swimming in oil. That paste has loads of the stuff and it oozes out when you make the curry. I skimmed most of it off. I don't feel that it saves time for this purpose either - it's just pretty pointless really IMHO.

I'm not a fan of Patak's there is some taste about it that is always there which ever one you use.

I remember when Gordon Ramsey went to 'Save ' a BIR and he said the only thing they made from scratch was the breads,there was  lot of 'pataks 'pastes on the shelves, makes you wonder eh ?

I think a lot of BIR's use them as marinades and I know at least one I've been to that turns their regular dishes into "balti" with the addition of Patak paste  :-X

I totally know what you mean. They all smell the same too. They all have those tiny white bits in them that looks like poorly ground coriander seeds...

I'm not a fan of Pataks in mainstream currys' it does indeed leave a particular taste,however the Balti Paste does seem to work nicely.
On the plus side I think  the Pataks pastes namely, the Tikka, Tandoori and Kashmiri Masala are excellent for Tikka/Tandoori marinades IMHO.

I'm not a fan of Pataks either.

Did a back to back trail of Pataks and Ferns Tandoori paste when I was feeling lazy recently, Ferns easily better!

I know one that does there. It's a pretty good curry.
