Star Anise (Anasphal)

Star anise is not related to aniseed but has the same distinctive, powerful, warm, sweet, aniseed-liquorice taste and smell as it contains the same volatile essential oil (anethol).   

The essential oil resides in the pericarp and not in the seed.  So use the whole star anise pod, not just the seeds.

It is often cited as being a "secret ingredient" of many BIRs and chefs (whether it's true or not). 

It is particularly useful for flavouring pilau rice (where star anise pods are added whole).  It can also be used as a minor constituent (in powder form) in masalas. 

Star anise is also one of the constituents of Chinese "Five Spice" powder.
