Hot red sauce

Does anyone know how to make the spicy red sauce they serve with sheik kebab.
It's tastes like it has mint sauce and tomato juice, with a chili kick. :o

Try this

Simple Pakora dipping sauce.

1. 250ml of good tomato ketchup
2. 250ml of water
3. Tsp. of salt
4. Tsp. of sugar
5. Tsp. of mint sauce.
6. Tblsp of lemon juice
7. Level Tsp. of chilli powder.

Just mix them all together and serve in a small bowl.


I got this off this forum, it was posted with a tandoori pakora recipe. I've tried it and it's pretty good.

Just mix them all together and serve in a small bowl.

Do the sugar and salt dissolve ok at room temp?

If you don't have lemon juice try some vinegar - it's the sweet and sour combo that you are after

thats not the type of hot red sauce they serve in any indian restaurant in liverpool

it has coriander tameraind and a few other goodies but god knows what

Hi,

This is a recipe for chili sauce found on another site i hope it helps.

Chilli Sauce

1 to 5 ripe Chilli naga's finely chopped
1 Onion finely chopped
3 cloves of Garlic crushed
1 tin Mangos in syrup (chopped and drained)
250ml Cider vinegar
1 cup of Sugar
juice of 1 Lime
1 tsp Curry powder
2 red Chillies ie cherry bombs or red habs
? tsp Salt
2 tsp English mustard

Method

1 .First fry onion and garlic until golden,
2. Add curry powder and stir fry for a minute.
3. Next add chopped mangos, lime juice, naga's and red chillies.
4. Cook down for 10 minuets on a medium low heat, stir to prevent sticking.
5. Now add vinegar, mustard, sugar, salt and boil for at least 5 minuets, or until a nice sauce consistency in achieved.
6. Now blend until smooth and pour into sterilized bottles.

My favourite Indian in the UK was the Shamrat in Maidstone where this sauce is served.

So digging deeper into this I understand the sauce to be

"lal achar".

The main ingredients are mango, green chilli, tamamrind, lime And few of chefs secrect ingredients.

Still looking for the recipe. Hope this helps.

P.S. This was from the Shamrat in Maidstone, a fine place to eat.
