What can be substituted in the Base Sauce Recipes where this ingrediant is listed, are the Knorr stock cubes acceptable?

I would say yes, I have used them before.
Experiment, and don't worry, you wont wreck a base sauce just by changing a minor detail like that.   ;)

Hi ThaiExpat,

Yes, I think Knorr Vegetable Bouillon was a fur fee than sent many people on a wild goose chase (others may disagree of course ;)).  I can't remember anyone actually finding any!

Somewhere, in the "10 years + experience" threads, I recall that granules can be used instead.

the knorr cubes have a stiff paste like texture so maybe they are just foil wrapped versions of the catering paste? anyway - I use them in my base sauces and lots of other stuff and very good they are too :P

I'm sure the taste/flavour will be very similar. The 'concentrates' may be different strengths, though. I have no idea, but I'd check. If a recipe says to use 15ml (or whatever) of paste it may not be correct to use 15ml of crumbled stock cubes.

George

I've tried the catering bouillon and the Knorr stock cubes and I couldn't detect any difference in the curry. I think they are a one for one substitute in that you can use the same amount of each for the same effect.
