This is a simple recipe for coconut chutney based on that found in Hilary Newstead's book "Indian Cookery":
Ingredients:
1/2 grated fresh coconut (or 50g desiccated coconut)
1 or 2 cloves of garlic (chopped)
1 tsp fresh ginger (chopped)
3 tbsp lemon or lime juice
salt and pepper to taste
Options:
Add 1 or 2 fresh chillis (chopped)
use a little tamarind instead of lemon/lime juice
Add 1 tbsp fresh coriander leaves
Add 0.5 tsp garam masala
Add 0.5 tsp roasted and ground cumin seeds
Add pinch of tumeric (or a couple of drops of yellow food colouring) to colour yellow
Add 0.5 tsp fried black mustard seeds
Method:
Simply place all the ingredients in a blender and blend until smooth

CA, have you tired this and if so what options did you prefer? I have only ever seen this served at one restaurant and it was so good we bought some to take home.
