Two Secret Ingredients
« on: March 22, 2007, 11:22 AM »
Hi All,

Just searching around the net and found this recipe, would you believe its from Big Brother, it does however elude to 2 Secret Ingredients -

-a small cup of milk
-half a cup of tomato ketchup.

I wonder if this may be soemthing that could be tested with the final curry making process to see what effect it has, obviously scale it down if making a curry for 1 as this recipe is for 4.  The recipe is below, but it says to put the milk in at the end and warm.....

MY CHICKEN CURRY RECIPE
SHILPA: MY STORY

INGREDIENTS: 4 diced chicken breasts' 3 tablespoons of vegetable oil' 2 finely chopped onions' 4 large finely chopped tomatoes' 1 tablespoon cumin powder' 1 tablespoon coriander powder' 11/2 tablespoons garam marsala' 2 bay leaves' a large chunk of fresh ginger finely grated' a pinch of salt and pepper' fresh, chopped coriander leaves for garnish. Now for my two secret ingredients - a small cup of milk and half a cup of tomato ketchup.

METHOD: Wash the chicken - you don't want to be accused of trying to poison your guests! Fry it in the oil in a large pot with onions until the meat is browning. Ensure there is no pink meat or you will face Jade's wrath! Pour in all other ingredients, except the milk, and stir until bubbling. Add the milk at the very end, and stir to warm. Serve with fluffy basmati rice and chopped coriander on top. Delicious.

Crikey Stew, are you really serious!   :o

Similar to CK...I often use ketchup to sweeten a curry (but a couple of tablespoons only..not 1/2 a cup!).  I also use milk in mild and creamy curries (such as kormas, chicken tikka masala, etc).

But, reading the recipe....does it really sound like a kosher BIR recipe to you?  It doesn't to me...but I may be wrong of course :-\

Regards,

Yep miles away from being a BIR Recipe but a tip all the same.
I think i may try the red sauce and see what that does.

Hi Stew,

Undoubtedly, adding sugar (either as sugar, or in another form such as ketchup) dramtically changes, and enhances, the taste of any curry  :)
