Does anyone have a tried-and-tested recipe for Punjabi chole masala ? I ask because I picked up a very interesting Punjabi vegetarian recipe book at St Thomas's yesterday (Punjabi Khana), in the Tarla Dalal series, and its recipe for Aloo Palak (which looks very good) calls for Punjabi chole masala. There are plenty of recipes on the web, of course, but I would be particularly interesting in learning of a tried-and-tested one.
