Manchester (Abdul's) Shami kebab pre-cook.







Pleased with this one.  Been waiting for years and hit on it recently by chance.

With all the trimmings.



Tender finely ground lamb, delicately spiced with coriander, green cardomom, fenugreek and chef's special blend of herbs and spices. Delicious.  I like to think of the Abdul's shami as one of the first Manchester Oxford Road street foods.

Getting about 12-15 kebabs from 500 g mutton mince.  Pre-cooked, quick and easy.

Yes Phil.  Thin egg coat, fried on.  Beauties aren't they?  Proper (Manchester) shami kebabs.  Very different to the typical Bangladeshi BIR versions made with seekh mix, or similar.  I think Julian would approve.


I've got about 50 in the freezer.

Ah, down here (south of the border) we would call those "reshmi kebabs" (because of the egg skein).

Could be Phil. although I don't think there's a shami/reshmi recipe on the forum anything what is used here, with or without egg.   This ain't no burger.  No onions either.  A little Middle Eastern touch to the flavours .  Seeing this more and more in Pakistani BIR cuisine hereabouts too.  I'l post the recipe in the appropriate section soon (ish).

Been focusing on Pakistani food this year and plan to carry on.

Yes me too because I'm a tad confused as to the cooking process. It seems to start off looking like a curry. Very interested to find out what's going on there.
