New to cooking and curries

Hi.
I'm Ed and Trying to create my own because the takeaways are no good.
Back when they were good, I loved the street style curry. So I'm going around trying to make the best base gravy and create a nice curry to start with.
Why I joined is because I am allergic to chilli so it's hard to find anything that doesn't use them. So far I just haven't included them but I'm looking for advice on how to make a nice tasting curry even without packing heat.

Well you can definitely start by making your own mix powder and garam masala minus the chilli!
