Anyone got any Indian pizza sauce recipes
« on: October 11, 2015, 02:48 PM »
I see a lot of pizza restaurants are now doing indian pizza sauces on their pizzas.
Has anyone got any recipes for pizza sauce, indian style.  I have seen Naga, Masala, Madras sauces but not sure how to go about making them as they need to be a lot thicker than indian base sauce, also a little sweeter.  Any recipes/ideas from you guys would be great.

Hi,
If you don't intend to make any curries, then I would aim to make a 2 onion base rather than kilos of onions and litres of gravy.
If you can't find a small base gravy via the forum search, then choose any popular recipe and scale it down to 2 onions.
Once cooled and blended youre ready to make a curry. A 2 onion base should make roughly 700ml.  (Or 2 portions of base gravy/curries) or enough for 20 odd pizzas   :o
Now you can choose any recipe on the forum to make a curry sauce for your pizza. Just leave out the solids, e.g. meat/chunky veg and reduce to a consistency of a tomato pizza base sauce.  :)

p.s  I've found that small bases tend to be quite sweet on their own anyway, but you can always add sugar or ketchup to your curry pizza sauce.

No offence dalpuri, but if you think a pizza restaurant would go through all that just to come up with with a pizza sauce then you're barking. It's far more likely they've simply adapted one of their existing tomato-based pizza sauce recipes with some indian ingredients to pep it up a bit.

Try this Wayne:

Indian pizza sauce - yield is 7 pizzas at 75g sauce per pizza
50ml veg oil
2 large clove garlic minced
500ml passata
75g tomato puree
2 lvl tsp curry powder
1 tbsp chilli pickle, eg Mr Naga or Pran Naga pickle
0.75 lvl tsp garlic powder
1 tbsp tandoori masala
1 level tsp Salt
1.5 lvl tsp msg
0.5 lvl tsp black Pepper
1 tbsp light soy sauce
1 level tbsp sugar
- add passata and tom pur

It takes an hour or less to make a 2 onion base so its no bother at all. Depending on whereabouts the poster is, the pizza place could be like they all are here in Scotland. Selling mostly pizza and kebabs but also every curry imaginable.
In which case, are more likely to use their base gravy to make a curry pizza.

Can't fault DP's logic (although I've never ordered a curry pizza) as there is a huge number of Asian-run curry/kebab/pizza takeaways here in the west of Scotland. The place is fair hoachin' wi' them! :)

All things being equal, the OP is more likely to be out of Scotland than within it :D

Ah! We're all Jock Tamson's bairns, Onions! :)

Doesn't look as if the OP was in a hurry for the answer as he hasn't logged on since the question was raised.
