My faithful chicken tikka masala

It's only Monday but I had the urge to make my faithful tikka masala I was shown by a chef how to make this around 10 years ago and I never get fed up of cooking and eating this.

Looks pretty good too mate. Better than the pizza I had to persevere with to keep the family happy tonight.

This is not a coconut sweet type masala you are often served in a restaurant! It's fairly spicy but of medium heat! And consists of a yoghurt  base red spicy sauce when added to your normal base makes this fantastic curry! I'm intending doing a short video on how to make it very soon so please keep checking the video section.

Well I hope it is easier to cook than the one I've just been trying to work out.  After viewing the link to Ali's base gravy posted elsewhere I also looked at his Chicken Tikka Masala video and thought that looks pretty easy, and it probably is.

But wow. Talk about a confused and muddled task.  Try to follow the recipe path for Chicken Tikka Masala. Should be easy enough you'd think.

Mixed powder (for the base gravy) - check.

Base Gravy - check.

Chicken Tikka Masala Indian Restaurant style.  The description says it uses "masala sauce, tikka masala sauce and red masala sauce", but the actual video shows only one sauce being used, which he calls a "Special Exotic Sauce".  Supposedly the next video will show how to make this, but which video is it?  In answer to a specific question about the exotic sauce, he directs one viewer to "how to make a diluted tomato paste with red food colour added", which it clearly isn't, and then even more confusing tells someone else that he put cream in it to make a mild dish. :o  Another viewer asks if it is the same as the Tikka Marinade and is answered by somebody else who confirms that it is.  So what is the Tikka Marinade then?

Precooked chicken tikka perhaps.  Nope, but there is a 48 second Chicken Tikka Marinade video showing a chef's hand mixing an unknown marinade through some cut up chicken breast.  No ingredient list or referral to another video here though.

Undeterred I browsed every video and found his Tikka Masala sauce, which looks promising and like it might be the right one used in the video as the Exotic Sauce.  Let's hope so.  But is it the same thing that the chicken was marinated in before it was pre-cooked?  You'd only be guessing if you tried to cook this from these videos.

So the remaining question here; Is the Tikka Masala Sauce used as both the marinade for the pre-cooked chicken and the Specal Exotic Sauce in the finished dish?

Hi Livo, Authentic BIR tikka masala sauce is not something you can knock up in 5 mins, it takes time to prepare and is not a marinade.
I can understand your confusion as these things take many trial and error to work out, years!!

Jb,Chewy and CBM have recipes for masala sauce or exotic sauce if you prefere ;) apologies to anyone I missed.

I have made the bulk CBM sauce, it takes a good few hours but is identical to my BIR and stunning flavour.
But be prepared for a days work.

The only reason I don't comment on the others is coz I haven't had time to make them yet.

My version of masala sauce is really easy to make up and cook and as been around for at least 30 years and in my opinion it's pretty good ! And believe me I've eaten quite a few over the years
Like I said earlier I will post a video very soon so you can give it a try if you wish.

LC, I'm prepared to put in the hours but it's annoying to have only half the information and even then, not be sure which bit is which.  This certainly is the case with the above mentioned videos.  Incomplete and disjointed.  The exotic sauce he mentions and uses in the video is a very silky smooth and bright red sauce, but there is nowhere on the youtube channel that actually presents this sauce.

I've just gone through the threads here and extracted Chewytikka's methods and ingredients which are complete and thorough, so I'll be looking at this for now. I notice that chewy's actual Chicken Tikka is similar to another one I watched today with the 2 stage marinade and similar ingredient list.

Regarding my post above about Ali's video, I may have been blaming the wrong party.  I'm just trying to sort out my efforts and scrambled notes so I went back to visit again today and to my surprise there are far more videos visible to me today than there was on Wednesday.  I can now see one that is called "How to make tikka masala sauce-Indian cooking -pabda20" (which is the one I used yesterday) and another more complex sauce video called "Tikka sauce-Indian restaurant cooking- Indian Cooking -pabda20".  The second video was not available to me on Wednesday, but hey presto, I can see it today.

I still don't know if either one of these is the sauce used in the Chicken Tikka Masala video though.
