Hi Curryholics !

I am going to make my first batch of base for over 6 months !   

6 month gap would have been unthinkable back in 2011 !  :)

 Will try JBs latest base looks good. thanks JB

What are the new spice mixes everyone is keen on at the mo?

Just onions cooked long and low after soaking for 15 mins to expel the unwanted acids is all that's needed
Unless you run a Bir add spices as demanded by recipes Believe it or nor some Birs use this method so as the staff cant copy the chefs recipes
This method is only any good if you are confident in what your doing otherwise back to powders and bases with cabbages dead foxes etc

Use any spice mix - makes little diff. It's how you cook them that counts.

I've moved away from using mix powders. Instead, I use only Mild Madras Curry Powder in my base sauce, and for most other purposes. It already has most spices in it, so I reckon that diluting and adulterating the curry powder with additional cumin, coriander, etc is a bad move. If that arrived at a better balanced mix, then the manufacturers would presumably have done it.

Good to see you back on the curry.

I buy from IFFU. Looks like 3rd order is becoming due.

To make myself would be parker21 mouchak and then yours.

Mix powder is one thing I'd still like to explore but is well down the list.

Gut feeling add more turmeric to mouchak and not far from IFFU.

I will try parker21 spice mix, that's one I missed during my gardening leave !

Hi DD, was too busy yesterday to make our usual madras so opted for the local t/a and very nice it was to  ;D Anyway , the thing is they don't add any additional spice mix to the final dish as its "all in da base" 8)
Makes me wonder the importance of adding any spice mix in the final dish .
