The mutton in Chewy's dish was precooked on the bone shoulder. A whole shoulder cut by the indian butchers and cooked using Chewy's pressure cooker method, http://www.curry-recipes.co.uk/curry/index.php/topic,12520.0.html

25 mins after pressure is reached then I just left it till cool then took the meat of the bone. I've done this a few times and its great for curries, in fact its probably my favourite curry meat (closely followed by skinned and boned chicken leg). I'm going to have to get some beef and try it as I have a fancy for a beef madras.

Cheers, Gav. But does a 'whole shoulder cut by the Indian butchers' mean that the shoulder was cut off the lamb as a whole or it was a shoulder, then cut up?

I just ask for a shoulder of sheep and he picks up a big lump of meat and cuts it up on his band saw and trims the big lumps of fat of. I'll pay more attention next time I'm buying.
