Looks great Rob. Mutton on the bone is my favourite curry meat at the moment although a certain member of this forum nearly changed me back to chicken last week.

MA, not a dessert M8 ;)

Rob
Looks like you usual tasty style,  8) often wondered what your stuff looks like without flash?

You could bottle that oil, pure essence of BIR.
Maybe send some to JerryM and make his day! ;D

Did you buy the Vadas or make them from scratch, if so, what lentils did you use?
Looks like chunky chat masala, Tamarind and Chilli/Coriander sauces for spicing.

Love guessing whats in a dish, but I have a head start as my mates wife makes these all the time usually stuffed with dates or green chilli.

curry on ;)
cheers Chewy

Hi Bob, can I ask please did u use Chaat Masala for your spiced yogurt? It's got a great spiced zing and I should imagine would work wonders here.
Thanks.

Don't worried I just read Chewy's post and same observation ! Duh!! Me !
Thanks

Normally Yes. just had a bad week on the oilly stuff "basic base". on a serious note i must admit i'm even more twitchy on oil than ever before. i started out thinking red oil (saffron), felt dark oil "brown" was naff (rajver). then came across yellow oil (my take) and felt it was far superior.

from the basic base work i've had to change my mind on dark oil. i've yet to put the basic base work into what i know ie yellow oil. keep me going for years.

for clarification i only refer to input or dish frying oil "re claimed" - no matter what finished dish oil is always red.

a real subject on it's own never mind bhaji oil or garlic tarka

Good spot chewy.  Urid dal.

http://www.vegrecipesofindia.com/dahi-vada-recipe/

Left out the nuts and raisins.  Toppings were tamicon/tamarina, chat masala/deggi mirch, Al Noor green chilli sauce, and cracked black pepper.  I just bunged some fresh mushrooms in the curry towards the end SS.  Works a treat.
