Hi Mattie I use KD1 rice method,fry spice,fry onion and rice add water bring to boil, turn to lowest heat for 5 mins, stir once, 3 mins stir once, 2 mins then put in an oven suitable dish , add colours and place in oven on a low heat for 15 mins to set colours, then fluff up

My mouth is watering looking at your pics even thought I can't eat a vindaloo any more, the rice and bread look spot on I 'll defo be making this base next.

Yep agreed top marks on them Naan's Andy, I got a whole big Batch made up today for Friday. Trouble is I can't stop the dam things rising in this heat!! Even the fridge didn't work :o

Madrasandy,that vindaloo looks lovely,glad to hear you and others on here are having some good results.It seems that vinadaloo and madras curries are quite popular on here.Next time I get in the kitchen I will get the recipe for the chef's home made chilli sauce,he puts it in all of his hot curries and I suspect that it will elevate a good madras/vindaloo to an exceptional one.

That would be excellent mate, the chilli sauce recipe and a madras or vindaloo recipe would make me very happy , I can imagine them been very good if using this base recipe as a marker. Cheers

Looks absolutely superb Andy! The Mrs is going away for a month in October so I'm going to fill my freezer with Madras and Pilau rice in a batch cooking marathon. I'll be doing this base and CT's Madras with a little methi as the only variation. Can't wait. :)
