Glad to find such a committed community...

Like many of you I have done the rounds of trying to find the holy grail of curry masala gravys. Also like many I have just found this website and look forward to trying out the delights contained herein.
Also in a similar way to my immediate newby predecessors I am a Welshman who lives "abroad" and I do go to Glastonbury every year, when it's open ;-)
I view with genuine appreciation the pole vote for your Best Curry Base Pole. It's a pity there are not more votes we can take comfort in, so I would like to hone the question down to a more simple denominator.
Bearing in mind that most bases are actually very similar and that there is no "real" secret ingredient, and we should always try to change the quantities to suit the produce we have to hand.
I would like to ask you all directly if you prefer to make your base sauce either with carrots, green pepers, potatoes, celery or other vegetable combinations or do you choose to leave these vegetables out and make a base sauce using the common ingredients, ghee/veg oil, garlic, ginger, onion, tomatoes (of whatever varient) curry powder (purchased or ground?), paprika, turmeric, coriander, cumin, salt and sugar.

Hi Geoff,
Welcome to the site
As for the base question I keep mine simple but include carrot and green pepper. Your best bet is to try a few out and see what you like, they are all very similar but like the restaurants they can make very different currys.

Hi Geof,
welcome ;D I think the fact that the "secret" could be a myth can only be a good thing, after all, once someone cracks it whats next for the forum?? As for base sauce I have so far done both styles but prefer vegetables in the base, such as Darth`s base....happy cooking.......regards....mike.. ;D

Hi Geoff
Welcome to Cr0 from a fellow Taff there are many bases on this site you can choose from but as Ck has already said try and keep it as simple as possible "Darths" Base is very popular but your better off trying a few then decide which you prefer anyway let us know how you get on.

Mad we all are.
Hi Geoff400 (any relation to HAL 9000 ? ;D).
There are a few bases here many have virtually the same ingredients.
Simple bases, without all the veggies.
And some a little more complex, with all the Vegetables.
I would recommend a more complex Vegetable base as it will give you a chance to at least make a good Curry because of the flavor within the base, the simple bases take experience & good luck to get the Curry tasting right as most of the flavor is in the second stage of cooking the Curry itself (IMHO).
Best to have a go a few & find which suits your particular taste.
Enjoy

Thanks everyone, I knocked up a standard onion/garlic/ginger/tomato base last night and will put it head to head with Darths over the weekend.
I must admit I do like the idea of the veg to give it a more fuller flavour.
