I guess that it boils down to a matter of perception....which is more important - taste or appearance . As CP previously pointed out , most base sauces will produce that well known greenish-brown hue . If you wish to disguise the colour , so be it....but maintain the taste ! Since most traditional / BIR recipes fall into this section of the colour spectrum , I really don't think that most curry aficionados will give one...perhaps two hoots about colour .

Looks good HotBot!  8)

I didn't even notice the chipped plate....until you mentioned it of course!  ;)

Not too sure about the brown sauce Layne?? (I think Layne was referring to the brown sauce on the side CC?)........that depends on whether it's HP or Daddies!........it is a little different to lime pickle and mango chutney for sure! ;)....but, maybe it is mango?....or tamarind?  :-\

:D na the brown looking sauce is MRS H.S.BALLS
ORIGINAL RECIPE CHUTNEY (originates from south africa)its a peach and apricot chutney can get it in sainsburys now and its well worth a try if you like a good chutney.(very similar to mango with a zing. :P
