Simple Chilli Chicken
« on: October 10, 2006, 01:43 PM »
When I worked in London in the 90s there was a very popular BIR dish simply called Chilli Chicken.  It was a dry stir-fried with lots of fresh chillis Chicken and some sliced onions, but it had a little of a very dry dark 'sauce' (fried masala).  It was fantastic and mind blowing, some say better than Phall.  Anyone know it and have an idea how to maake it.  I have tried but just can't get right.

Thanks
CP

There might well be a " TEX-mex " influence on this taste CP , I shall do some detective work with my chef friends in Texas .

It could well be Gary.  I think traditional Piri Piri Chicken is very dry, i.e. a stir fry.  So that would fit.  Many thanks

Had a look Gary, and it looks good but not the one I am looking for.  Literally this dish has Chicken cubed, loads of sliced bean chillis, a bit of onion, and stir fried in a very small amount of thick dark brown masala.  Oh well, I will keep on searching.  Thanks Gary.
