Thanks for posting that Chris,he seems to be a nice chap (and a very busy one as well!)

To me it looked like a straight forward dupiaza recipe, and then that 'magic' oil came into play...very  very interesting indeed.

Nicely shot video.  The chef at one of my local TAs uses 3 types of onions for a dopiaza.  Chopped raw (with a little green pepper), pre-cooked slow fried (he refers to these as "bhuna onions") and quick deep fried (as Sam seems to use).

Did we ever establish what the 'magic' oil actually was? Great video though!

It's a shame Sam never carried on the work he contributed to the home BIR chef, he was superb and informative in front of the camera.

He never really needed Chris, but could of started a channel or book on his own merit ! Always find myself watching his videos from time to time, I do wonder if he is still cooking takeaways.

LC, is that 'Sam' doing the actual cooking and talking then? I assumed that was H4C-! In the videos  :o

Yep it's all Sam, I'm sure he is used to teaching his chefs BIR cooking,he has a natural gift for teaching his trade.
Chris is standing behind the counter next to a small camera on a tripod, it's placed on the counter top for stability. I have to give a credit for the editing and film quality to Chris, also for getting us inside SAMs Takeout but I think Sam could of bridged this gap if he felt inclined to do so.
