Chicken Punjabi Masala

Stephen Lindsay's recipe.  I made it slightly hotter and sweeter as I remember for a Manchester "Tandoori Masala" version.  Very delicious!





Boiled rice, ready-made methi roti, and a good dollop of Naga Raja on the side.

Yes, I can see it being popular with friends, not too hot, not too mild.  Colourful and saucy.  Not yet cooked for any friends as yet but gearing up for it.  Reasonably confident for a small gathering.  I also have an ace up my sleeve.  The chef at my local TA is no longer there (hence I'm back in my kitchen with a vengeance).  We have however stayed friends and he has promised to come round and give me a hand(i) cooking when needed.

Always handi to have an extra pair of handis,  :D

Been really busy at the moment had four parties to cater for over the past few weeks so really haven't had time for anything.

Can't wait for the report back on the friend in kitchen reports.

What did you add extra to the recipe to make it a Manchester Tandoori Masala.

What did you add extra to the recipe to make it a Manchester Tandoori Masala.

An extra tsp of chilli powder and a good pinch of sugar.  I also recall the Manchester Tandoori Masala as pretty saucy, similar to the Madras there circa mid/late 80's.  Chicken strips with an oily roasted taste, as opposed to tikka, so probably taken from a skewered bird. SL's recipe is spot on though I think, with green pepper prominent in the dish.  Chicken Tandoori Masala is actually on the menu at my local TA here in Brum; must give it a go.
