Hello curry lovers!
I am still here. Although I have had only a marginal success in creating the TA taste. In fact my boyfriend and I regularly go to the local curry house. We do try to cook at home but usually he is disappointed and says his curry is bland. One thing that has been brilliant is a recipe that appeared at Xmas time for curry puffs. My boyfriend regularly cooks these, they're easy, tasty and make a good meal. We did discover that the ingredients in the Jus-Rol ready made pastry were a bit alarming so yesterday I made puff pastry from scratch. Good result.
I will always adore eating curry.

For me, I think that cooking BIR curries has similarities to the male domain of the BBQ. Keep back ladies, the Master Chef is in charge and in control. What mess? :P ::)

I'm not too worried about the lack of ladies on the forum, although I would certainly welcome them, but I am worried about Colette's post (Terramamba) and the fact that she is not achieving the results that many other members are enjoying?

Colette, could you maybe start another thread that explains where your gaps are?  I'm sure many of recipe providers could point you in the right direction and help turn your 'bland' curries into something very close close to BIR/TA standard.

Lets keep you out of your local TA and get you back in the kitchen, creating the magic, eh?

A common problem that can make a curry bland is trying to stretch the ingredients to 2 or more portions.
e.g. "i'll add some potato and a few peppers to this with a splash more water", Often its a bad judgement of volume in the pan, so we tend to over compensate.
I've done it a few times myself in the past and not just with curry.
I've always had a habit of cooking a 4 portion meal at a time so on occasion, my curries (unintentionally) ended up the same way.

How many times do you read of someone making a curry and having plenty left over for the next day??
Did you eat Any at all the first day?  :P

The best way around this problem is to increase the diameter of your pan and NOT the height.
Or.. make very small Individual portions.  ;)

The rest of the quote is just as important Ruby.  ;)

People need to think wide like a Paella pan and not tall like a casserole when scaling up.
