A common problem that can make a curry bland is trying to stretch the ingredients to 2 or more portions.
e.g. "i'll add some potato and a few peppers to this with a splash more water", Often its a bad judgement of volume in the pan, so we tend to over compensate.
I've done it a few times myself in the past and not just with curry.
I've always had a habit of cooking a 4 portion meal at a time so on occasion, my curries (unintentionally) ended up the same way.
How many times do you read of someone making a curry and having
plenty left over for the next day??
Did you eat
Any at all the first day?

The best way around this problem is to increase the diameter of your pan and NOT the height.
Or.. make very small Individual portions.
