I use frozen Shatkora (Ibco) and is much better and more consistent than fresh.
They don't precook it in BIR, just diced small and cooked with the service onions when creating the masala.
Shatkora is unique to Sylhet, Bangladesh.(There is no substitute)
You won't find this on the menu in Pakistani run BIR's. So it would be a new experience for our Scottish members.
It's the wide pith and zest that's important, not the fruit or juice, which there is very little, unlike other citrus fruits.
The Satkora pickle (Pran) is also really good in my Achari recipe
