Now that spam is off the menu for a while time to post up what i got up to at the weekend. I eventually made Stephen Lindsey's Punjabi Masala and very nice it was too. Recipe and review posted here:

Of course i took the necessary porn pics just to bring a smile to those who were equally p*****d off as i was due to a severe dose of dross the entire weekend which has for now been addressed

This dish of course deserved to be accompanied by a good rice so i chose my keema rice, just like my local make it:

Having had great success with the mushroom bhaji as per the little india vids this seemed a natural side

But the weekend didn't stop there. Last night i fancied something a little hotter so i opted for a chicken vindaloo with some freshly chopped green chillis added towards the end to give the dish a bit of attitude. Main reason for this was that i wanted to try something to modify the texture of the sauce slightly in an attempt to replicate the sauce from a local take away that i have patronised for the last 25 years or so. More about that in another thread at some point. The then chef now owns the restuarant and i must take him up on his offer of spending a day in the kitchen.
Anyway, less waffle. I make no apologies for the mushroom bhaji appearing yet again. I really am impressed with this dish. Last night i added extra fresh garlic while frying the onions and added garlic puree towards the end of the fry. This gave a totally different finish and the garlic flavour came through really strongly, just like another local BIR who do a garlic mushroom dish. I'm sure jb knows the one to which i refer and I recommend he try this little trick

A different rice tonight. Special rice relyiing on the onions and peas to provide sweetness with a hint of coconut and a lovely egg flavour

Have made an Elaichi NIS tonight and i'll be warming that up in a mo just to polish off the pre-cooked onions and peppers and the left over rice. Mustn't waste food now, must we?? ;D I may just tag that on the end once i've eaten it :
