I never have much joy when I try to up ratio. I just never seem to produce an end dish that is as consistant as my one portion curries. However, I know that some members do have success this way and I remember this conversation a while back where Mick (CBM) produce some photos of an actual BIR cooking quite a large portion of Korma.
Me personally, I would stick with one portion at a time but, I guess I'm not looking to make a 30 portion madras ;D
Just a thought, Tomdip often cooks large quantities that he serves up in his pub, maybe he's your man for this one mate?
