Base mix question

Does anyone of you experienced chef's add fruit to a base mix eg: apples, pears or would it spoil?

No,not in my experience.
Why would you think to add fruit to an onion gravy. ???

Hi Balloo,

I've never seen fruit, except tomato, added to a base as a bulk ingredient.  However, forum member; Axe, spent sometime in the Indian Garden Restaurant kitchens, where he did witness them putting in half a lemon in their base.  I think he explained the reason for this as a way of getting a 'sweetness' into the base.

Never seen anything like apple, pear, peaches and so on though, sorry mate.

It was just when i worked as a delivery driver in my local Takeaway they were always buying apples but non of the recipes had apples in them, thought it would sweeten the base mix. No Problem thanks again Chef's

I remember the mother of a friend of mine from many years back used grated apples and raisins in her curry recipe.  She and her husband had worked for many years in the Middle East, so maybe they got the idea from there.  I never did watch the entire cooking process, but as I recall the taste was very good!  I tried to replicate it myself one time but it was a total disaster!

i can't see apples or pears really working in base.

i do use lemon though in base as standard (as per Axe suggestion). i use 0.25 to 0.5 per ~1000g of onion.

i use banana in the finished dish in place of meat quite a lot - works a treat.
