Anyone have a good chicken curry recipe for my takeaway shop in Bangkok, Thailand? At the moment I'm making a chicken curry similar to the madras but adding potatoes and less chilli.

You could try this one mate https://curry-recipes.co.uk/curry/index.php?topic=5148.0 It is what is described as 'Medium Chicken Curry' on the BIR menu.  It's quite plain and simple but very flavoursome nonetheless!
