lmfao , i just watched that clip and the guy uses his knife after peeling back, just use a knife , no need to peel unless you cant afford to lose a little ginger lol

But in fairness to 976, he used the back of the knife so the principle of using a blunt edge to scrape the ginger is a sound one, in my mind rather like scraping a carrot.

I usually use a peeler to do ginger but i'll try this method next time round.

To be fair gazman using a spoon or any blunt scraper is a fairly well known technique but I have to agree with you that if you're going to peel it a knife might be simpler. The crucial thing is the condition of your ginger. If it's really fresh then the skin is usually very thin and there's no harm in just not bothering to peel it. If, on the other hand, it's old ginger, then peeling it is probably wise as the skin gets a bit dodgy.

thank you artistpaul is realy hard at the min for me..
just trying to get my head right so i can contribute hopefully to this great site and start cooking my own bir currys hopefully..

my dad use to deliver currys for our local indian tkaway and ive fixed a few of there home computers for them in the past so hopefully i will ask them if i can watch them cook in there tkaway.
