Greetings from (surprisingly) curry dry Mexico

Not long here in Queretaro, central Mexico from Scotland and finding it to be somewhat short in the curry front, as well as the ingredients. So if anyone doesn't mind being a cardamom mule I can swap them for some of the best damned chillies you could hope to cook with.
