Lamb or Mutton?
« on: July 10, 2009, 12:01 PM »
What is your preferred choice of meat and why? I always use lamb, but traditionally I think mutton is always the choice of Asians at home. Thoughts and feedback please guys! :-\

Hi LennyB,

Either is fine, but mutton (if you can actually find it!) is a lot cheaper (and tastier/stronger flavoured).

Mutton lends itself well to precooking (but it requires longer than lamb because it's tougher). Once cooked, I'd personally be hard pushed to tell the two apart.

When Indians and Pakistanis say "mutton", they are talking about goat meat, which I am told by a Pakistani work colleague is a less red meat which his family and friends prefer. I learned this through a discussion about lamb at work, in which two Asian colleagues mentioned that they prefer mutton.

"In many eastern countries including the Indian sub-continent, Malaysia and Singapore the term mutton refers to goat's meat (which is also called chevon) and usually not to sheep's meat." - wikipedia mutton

Cheers guys, I also looked up an article in the River Cottage book on meat, mutton(3rd season plus) or hoggat(2nd season) are very under rated meats and are actually preferable to lamb!So I thinks a trip to the local halal shop might be in order. :)
