Does anyone know where I can buy a frying pan that the typical BIRs use. They are about 10-12 inch diameter, sloping sides and all metal - not sure if they are stainless steel or aluminium.

The only ones I can find are all teflon coated and that just won't do due to all the scraping around with the chef's spoon

These are real chef's pans,not the sort used by all those TV cooks. Brand name is Black Iron, although they are actually made of mild steel.They need more care than the usual domestic type pan, but are great to use. Any catering supplier should have them, but you may have to order the size you want. A 9" Black Iron omlette pan is just about right for normal portions of curry, evaporation is ok and a stainless steel cook's spoon completes the kit.

Ebay is always a good option for the unusual & hard to find.

Thanks for the replies. The black iron ones look similar, but the ones I found on the web have a solid metal handle (that looks like it could get seriously hot). This one looks llike a hollow metal handle and is more like the ones the BIR uses

Blade, you shouldn't cook anything acidic in an aluminium pan and curries are definitely acidic. I think the ones on your link are aluminium

I have 2 of these one slightly smaller and the handles don't get hot unless u leave them above a flame, which ive done I must admit, but only the once  :

John Lewis used to do pressed iron pans of various sizes which work excellently. I'm not sure if they still do them. Unlike S/steel they're not very "sticky". I would avoid aluminum with anything acidic as it's been linked to  Alzheimer?s disease . So no lemon juice, vintager or toms, i.e, not many curries.

Your best bet is to look through the yellow pages for catering suppliers.

Sorry blade they wern't actually mine to begin with so ive no idea where they come from!
