Just joined the site and wanted to say what a great site this is, and thanks to everyone for making it happen. I notice many curries posted on this site use chilly powder instead of fresh chillies. From my experience the heat from 3 small green chillies combined with 2 hot red chillies produces an excellent quality heat far tastier than simply using powdered chilly. For a good vindaloo try using 3 hot green chillies and 2 hot red chillies instead of any chilly powder. I personally think it is a much better quality of heat. Let me know your opinion on this.
