I have this feeling that as Curry cooks and learning more as we progress we are becoming too critical of everything,maybe that's good.
How many here have found there ideal dish then changed it over and over again, lots have on this forum,nothing wrong with that but why does it happen
Any ideas ?

Maybe in the search for the 'perfect' curry we lose track of what was actually good about a recipe in the first place

I think its human nature. Yesterday i made a curry for myself and my mate and as we were eating it, he's raving about it as he doesn't get them often from me and I'm thinking that it could be better, perhaps I should have done this, not done that etc etc. I would assume its the same with your curry nights Andy with your mates.

Yes Gav.I it is and with the wife, 90% of the time I think it can be better but eveyone else says how bloody good it is!! Maybe it is or maybe they are just been polite?

Over critical, yep agreed ! Often I cook curry fur lunch at work, working with 20 felas they can be critical.
But the boys always ask questions when I warm up the currys, the main question is how do I get the restaurant smell and taste in my curry.

This question always puzzles me as I can't smell or taste the ilusive magic, I believe I have become accustomed to the smell and flavor with all the cooking I do.

The felas were heating a curry one day as I walked past our work lodge and wow!! The smell was awesome drifting down the corridor.

I am defiantly overcritical of my cooking.

I think there is always an overcritical aspect whenever you cook any cuisine, not just curries. I often find my dishes are OK or good but the Mrs and friends rave about them. It happens especially when I make bread.I'm never fully happy with the end result

Definitely over critical, but my senses & appetite are also normally shot after too long in the kitchen

Not over critical for me.

is simply comparing what i cook against what i eat out and ultimately compare side by side using a take out.

there is no more than a handful of mains that stack up against decent BIR.

comes down to strict record keeping too (so you know what you did last time).

if anything i'd say i'm paranoid on consistency.
