my take on a simple but nice curry base and chicken madras (chicken madras recipe moved to here by CA: https://curry-recipes.co.uk/curry/index.php?topic=4318.0)
i have tried a lot of them on here, and this is what i came up with
4kg chopped onion
2 small garlic bulbs
piece of peeled root ginger
2 tablespoons of turmeric
2 tablespoons of cumin
2 tablespoons of curry powder
2 tablespoons of coriander
2 tablespoons of paprika
1 tablespoon of salt
1 tablespoon of chilli powder
half cup of veg oil
roughly peel and chop all the onions fill with cold water so the onions are just covered
bring to the boil and simmer for 25 Min's then add all the spices and salt and simmer for 10Min's
finely add the oil and simmer for a further 10Min's allow to cool and blend until smooth
half the amount of ingredients to get half the amount of base sauce
