Lets Talk Curry / Re: The BIR secret....

Back on Topic
Mix Powder, that old chestnut.  Methi powder in a BIR Mix powder, just does not happen.
There are loads of secrets in BIR cooking not published anywhere, quite delusional for members to think otherwise.

How sad, :tears: comparing supermarket curry, to anything BIR quality is a joke. :dislike:
especially the cheap meat, dry, overcooked and tasteless.
But if you dont like cooking or are challenged, it

Welcome Romain
I subbed your blog in 2017 as I thought your Insta style photos were very good,
interesting and well staged.
This is when you were an active member on Les Jones (CA) fake BIR site.
and a non active member here on cR0, under a different avatar of course.

As you live in Canada, it would be nice to see what you can buy locally
from an (Indian Restaurant). I am also curious to know whether you have ever
actually ate British Indian Curries i.e. in the U.K. or is your research simply
from forums and Youtube.

Curry Base Chat / Re: Boiling Whole Onion v Chopped Onions

Nice one Alchemist.
There are no scientists in BIR kitchens  :smile2:
Just lots of 50ltr stock pots full of whole onions.

N.B. They still have to top, tail and peel the onions.
So any centre rot is glaringly obvious.
My friends call them Tossers, which I still find funny. :smiling eyes:

cheers, look forward to you input.

Alchemist, Good to see your still learning authentic BIR methods
Are you another refugee from the Les Jones copy site?

Whole Onions, bit of a no brainer really.
My fine example here:

Got the book, as I liked these guys from day one, simple recipes,
a lot generic if your into Indian cooking already, but still good.
The stories, mirror their website, but make the book even more interesting.

If your just a BIR Madras, Korma fan, this is not for you.

cheers Chewy

Waste of time, unless you become a purest.
Galangal is an interesting root to explore, has a great flavour.

Lets Talk Curry / Re: Dhansak spicing
« on: October 01, 2019, 03:19 PM »
Are you allowed to attempt BIR cooking again?
The BIR shops, are these in the UK or Sweden?

BIR Dhansak is a Sweet and Sour Lentil Curry, as simple as.
In my recipes, I favour MANGAL Dhansak Masala Powder and Tamarind
as an enhancement to a restaurant basic dish, - Sugar, Lemon, Worcestershire and Pineapple.

cheers Chewy, The Dhansak expert ;D ;D
