Thanks JJ, I admire your intent to share info with us, but you'll find this has been discussed here before and is far from clear cut, even though you may have read about it in Julian's books. No doubt some BIRs do adopt this method but it's not clear that the practice is very widespread. There's an awful lot which Julian asserts as fact which is somewhat questionable IMHO. You'll find a lot more reliable info here I would suggest, although it pays to be selective in who you listen to. Good luck :)

Hey Natterjak, yeah I guessed it may have been discussed. I've not been here for a while, and just wanted to point it out incase anyone arrived from YouTube here.

I like Julian's books, it's the "closest" I've got to a takeaway dish. It doesn't mimik the high end restaurants in my area who charge ?15 for a curry! But they do taste better than the crappy places around here. So it's a step forward in improving my takeaway style curry dishes - although I still enjoy classic recipes.

I'll check out some other threads on this cooking method.

I'll have to check these out. I probably need about 40 or so. Asda have some similar ones but they're 1 pound each and that's for the smallest ones. Ideally I want one container per packet as opposed to storing multiple packets in one container. Easier to access with the spoon too.

As mad as it sounds I'd pay 50 quid for a cookbook that divulged the little tricks etc and I'm not that fussed on lots of recipes tbh I'd like 4 or 5 max a Balti Madras Vindaloo Garlic Chill and the like cos if i could reproduce these I'd be well happy, you recommend the Glasgow pdf is that on this site Haldi?

Lets Talk Curry / Containers for Spices?

Does anyone have any good recommendations for containers/jars for spices? I usually buy big packets so the little spice jars won't work. Looking for something that's cheap, but does the job. Any ideas?

The secret to the oil guys and girls is onion bhaji's. You make the onion bhaji's in the oil, and the oil left over is the one used in this video. Most, if not all, takeaways will make their oil the same way.

I know this is an older thread, but I arrived here from a Facebook post about a guy asking what this oil is. So, yeah, now you know :D

As a spice hunter, do you have any tips to survive to morning after? Anything to eat/drink tonight to lessen the effects? I'm supposed to be at the gym at 8am, I really hope I can still go.
Don't worry, you'll be at the gym in time providing you can leave the boy's room  ::).  Just make sure you're up about an hour earlier than normal to let nature take its course  :o . No remedy for a hot curry.  Providing you cooked the spices in full, you'll be fine.  If you didn't, the only advice i can give is not to leave finger nail marks down the WC wall.  The Mrs won't thank you for them  ;D ;D Address PM'd

LMAO at the last part! I usually sit there rocking backwards and forwards. I don't even bother moving for 45 minutes because the moment I leave the toilet I need to go back in there.

Fingers crossed. Will get it posted tomorrow too. Enjoy it, and let me know how it goes for you.

Hi JJ.  Glad it hit the spot ;D ;D ;D I'll certainly take the remainder of the bag off your hands. Just PM me what you want and i'll give you my address.
Being a phall eater, if you don't sweat, it ain't hot enought.  Red faced, eyes and veins bulging is a good start, but you need to sweat in areas you didn't think could produce sweat.  Oh, and i forgot the hiccups as well.  If i don't get all these sensations, then it isn't one of the hotest curries i've eaten.  In my 25 plus years of eating hot,  only two curries have ever managed to do a proper job as described above.  One was curry hell from the Rupali in Newcastle, the other from a restaurant in Lowestoft.  Not sure about that Jalzalah from Curried Away though, not exactly appetising look to it  :-\

Ah yeah forgot to mention the hiccups. That's usually my gauge for measuring a hot curry. I started hiccuping instantly, even when I had a small teaspoon taste from the pot.

The half a packet is enough for at least 2 curries. PM me your address and I'll post it off to you tomorrow.

I cooked it, and I was defeated. Seriously guys, this is terribly hot. My lips are burning now and I am genuinely scared about the morning after.

My stomach feels like it's on fire. I eat Phall's on a regular basis, and I've never felt burning sensations like I did with this. It went something like this:

1st mouthful ... can't feel nothing ... oh, here it comes ... oh jesus! it's getting hotter ... give me a sip of milk quick!
2nd, 3rd and 4th mouthful are ok because my mouth can't get any hotter.
After the 4th mouthful my mouth started to burn, and then it started to get hotter and hotter with every mouthful. My lips went numb, I lost the sense of taste.

I had to to stop. I ate 3/4's of it and couldn't eat the rest. It really was that bad. If the morning after is ok I'll defiantly give it another shot and finish it all. I've still got some in a Tupperware tub.

One thing I've never done when eating spicey food is sweat, and I was sweating eating this. My face was as red as a tomato.

I'm not saying this to put people off because it was actually nice, and the whole fun of eating seriously spicey food is exciting if you can handle it.

I've still got half a packet left if anyone wants me to post it to them, although tbh it's pretty cheap anyway.

Would love to see if a curry can be done with a chilli hotter than a Naga.
