Thanks JJ, I admire your intent to share info with us, but you'll find this has been discussed here before and is far from clear cut, even though you may have read about it in Julian's books. No doubt some BIRs do adopt this method but it's not clear that the practice is very widespread. There's an awful lot which Julian asserts as fact which is somewhat questionable IMHO. You'll find a lot more reliable info here I would suggest, although it pays to be selective in who you listen to. Good luck
Thanks Haldi!As mad as it sounds I'd pay 50 quid for a cookbook that divulged the little tricks etc and I'm not that fussed on lots of recipes tbh I'd like 4 or 5 max a Balti Madras Vindaloo Garlic Chill and the like cos if i could reproduce these I'd be well happy, you recommend the Glasgow pdf is that on this site Haldi? Just PM me what you want and i'll give you my address.Being a phall eater, if you don't sweat, it ain't hot enought. Red faced, eyes and veins bulging is a good start, but you need to sweat in areas you didn't think could produce sweat. Oh, and i forgot the hiccups as well. If i don't get all these sensations, then it isn't one of the hotest curries i've eaten. In my 25 plus years of eating hot, only two curries have ever managed to do a proper job as described above. One was curry hell from the Rupali in Newcastle, the other from a restaurant in Lowestoft. Not sure about that Jalzalah from Curried Away though, not exactly appetising look to it
