Title: My mission is to create the ULTIMATE curry

Hello everyone,

I am going to develop a recipe for the perfect curry - which I am titling the Ultimate.

The idea is that this becomes a staple on any Indian Restaurants menu, and becomes the sauce of choice for all curry lovers.

Instead of a family ordering a Chicken Tikka Massalla, Chicken Kirma, Lamb Bhuna and King Prawn Madras, I want the order to be 2 Chicken Ultimates, 1 Lamb Ultimate and 1 Ling Prawn Ultimate!

The dish is going to be hot and sweet, thick, velvety, rich.

I haven't actually made the sauce yet, but I have conceived a recipe in my head which I am going to start with and develop in small batches.

Before I start, let me know your opinions on the below:

2 large onions, half a carrot and a few cauliflower florets - boiled until soft.

Puree the above  with 2 green finger chillis and a red chilli.

Heat tablespoon of ghee and fry the puree - adding a teaspoon of hot curry powder, ground coriander, methi, tumeric, cloce of garlic and a pinch of fresh ginger

Add a tablespoon of tomato puree, tablespoon of ground almond and about 50g of creamed coconut

I want the curry 'Tandoori Red' so I will add a drop of colour

Thin the sauce with chicken stock and cook for a few hours

Finish with fresh coriander, cashew and lemon juice


Is this going to be the best curry sauce ever - if not, what would you change?

Your approach, which seems somewhat muddled to me.

As the Chinese Philosopher said to the stranger who stopped him on a desolate road asking for directions to such and such a place, after thinking for a few moments he replies:

"...if I were trying to get to this place, I wouldn't be starting from here."

Is this a meatless dish? If not, what stage are you going to add the meat? I think this is so off the mark I am may just try it just for fun........... Only one portion though.

good luck with your dish, maybe after you do that, try a few base sauces on here with some recipes then compare

Good luck - I think you're going to need it. Most of us are finding it quite difficult to even draw level with the best dishes from BIRs, let alone producing something which is even better.

Yes, it's just the sauce at the moment.

Chicken marinaded in yogurt, ginger, garlic can be added 30 mins before the end I think.

Cheers Gaz, due to the small sample I'm starting with, I'm doing a quick 2 onion base.

When flavour is perfected, I'll tweak quantities and do a proper base.

Good luck - I think you're going to need it. Most of us are finding it quite difficult to even draw level with the best dishes from BIRs, let alone producing something which is even better.

Thanks George - I really believe this is going to be the best curry sauce in the UK.

rjo333 make a curry that has the aroma and delicious taste of the curries from the late seventies, and early eighties, and you'll have achieved your "chicken ultimate". Produce anything else and it'll be chicken so-so. I'm betting it'll be the latter.

Today is the day boys!!!

Ulrimate Sauce v1.00 will be made today in a small quantity.

Expect depth, heat, sweetness, rich, thick, flavourful, spicy, nutty.

Will update with progress.

I can't help but cringe when reading this (and other similar) posts that seem to turn up now and then. It's as if recently this forum became a host for attention seekers  "Mah, look at me mah, I can make curry without hands!"

I don't intend to disrupt your hopes, but as an assiduous forum reader, it's quite annoying seeing two of your topics, with the same title and same comment and the exact same claims straight out of your idealistic and imaginary concoction. Maybe I'm a pedant for clarity and organization, but your topics aren't really adding anything important that I think you should get away with, going forward.

Moreover, lately it's difficult to understand whether this is a forum about curry and more generally cooking or whether this is a curry support group. Lately it sounds more like the latter AFAIC, although understandably so there is a thin line separating both.

For what it's worth, I'm going to be world's best curry chef in 2 years and until then I'm going to update you all with my cunning plan, but not really provide any thing factual/palpable to backup my claims. Write that down, ladies. Next update in 10minutes.

UPDATE!!!!!

Version 1.00 made and tested.

Not the perfect curry yet but a fantastic first attempt.  Lovely caramelised onion gravy, sweetness from coconut and ground almond, heat from fresh green chilli, a little sharpness from fresh lemon, some soothing warmth from cinnamon.

Recipe and method below:

Add a teaspoon of hot curry powder to a pan of boiling water, and boil 2 large onions, half a carrot and a quarter green pepper for 10 mins.

Heat 2 tablespoons of ghee, and gently fry 1 teaspoon of Tumeric, 1 teaspoon of Madras powder, 1 teaspoon of Ground Coriander and half a teaspoon of Methi Powder for 2 mins.

Add the boiled onions, carrot and pepper and gently fry for an hour.

Add a teaspoon of chopped red chilli and a tablespoon of tomato puree, stir well and continue to simmer for another 30 mins.

Blend to a sauce, add 2 cloves of garlic, 1 teaspoon of ginger, a cinnamon stick, about 80g of creamed coconut (block) and 2 tablespoons of sugar. Continue to simmer for another hour.

Remove cinnamon stick, add a tablespoon of natural yoghurt and chopped coriander, and squeeze fresh lemon and sugar and salt to taste.

Despite the curry being delicious, I can't help but feel version 1.00 has fell short of being the worlds best curry - which is a shame.

Would any of the chefs on the forum like to make a batch and see if they can take it to the next level?

As I type, it continues to cook on the stove - maybe it will mature into something even better.

I am debating adding red colour to get that 'Tandoori Red' shimmer on it.


UPDATE!!!!

In what can only be described as a beginners error, I didn't add any salt whatsoever!

After another hour on the hot, with the addition of a little more lemon and some salt, this curry is really growing into something special!!

On a sidenote - I don't think my hand blender is good enough.  It's was a ?9 ASDA smartprice one.  Any reccomendations?

It's not a Korma, it's a new and unique curry conceived and developed by me.

Nicely presented though and looks very appetising ( NOT ). Certainly gets my vote as the best reproduction of a pavement pizza often to be found in Croydon High Street on a Saturday night!!!!.  ;)

I'm sorry you are rather setting yourself up for ridicule and criticism. If you are serious and not a pure wind up merchant, then your approach is wrong. It would be a bit like me declaring that I'm setting out today to win the men's singles title at Wimbledon, only to report a few days later that early attempts are not going according to plan in that I forgot to take a tennis racket to my self-taught practice session (like you forgot to add salt).

Why not wait until you have something useful to say?

I'm pretty sure george's comments are based on the fact he likes his kormas mild and without fish. I can understand that very well. If  he made a jalfrezi with coconut  I'd be pretty pissed off myself too.

I concede there's probably no stopping you. You registered under 6 months ago and, posting at a rate of almost 4 posts per day, I can't compete with that sort of dedication, obsession, or whatever anyone might call it. Good luck to you if you want to sign up to the mission to create the 'ultimate curry'.

Not really wanting to signup for anything, in fact, I made my statement on this curry in here (http://www.curry-recipes.co.uk/curry/index.php?action=post;quote=94829;topic=11899.10;last_msg=94935) very clear, IIRC.

Regarding my post stats, moving abroad from UK gave me a motivational boost to try and replicate the curries I ate on an average of 5/7 days a week for the most part of my 2.5 years living in Cambridge;
Unlike most of the UK locals with similar aspirations, I lack good quality alternatives where I live, so I'm sorry if I spend too much time trying to learn all the obscure terms in this industry, techniques, clarify recipes, contributing a log of my failures and successes and engaging in general banther.

Added some sliced banana - the heat, the sweetness, the velvety thickness all marries together really well.

Looks OK does that.  Bit of coriander on top would be nice. Are you sure about the banana?

I love banana in curry - starting from my first ever curry experience.

I was 9 years old, growing up in a posh area of Liverpool called Wavertree Garden Suberbs.

My only experience of curry was 'a carton of' from the one Chinese takeaway in the village.  My dad had told me about real curries, and promised he would take me for a proper Indian one day.

Fortunately, an Indian takeaway called 'Parade' opened up in the village.  My dad brought home a menu on the Wednesday and promised Friday night tea from there.  He told me I could pick two curries and we would share.

After studying the menu for 3 days, I opted for Chicken Malaya - described as farly mild with pineapple, and Chicken Kashmiri - described as mild, creamy with yoghurt and banana.

When we got them, they were exactly the same curry!  One had a pineapple ring and the other had some sliced banana. 

Both absolutely delicious though!!

Yup, you're right about the banana.  Just got a TA menu from a place I've not tried before with a house speciality, Chicken Dangoli.  "Spicy chicken cooked with cashew nuts, fresh cream, and banana".

Ex hot chicken dangoli.  Sounds like a plan.  Maybe not.  Do like banana fritters though.  Recall at one time they were only available from Chinese restaurants, but nowadays quite a few Indian restaurants/TAs have them on the menu.
