Lets Talk Curry / Massive supermarket
September 06, 2015, 07:37 PM
Paks supermarket in Rotherham
This well stocked supermarket is well worth the short drive over from Sheffield to Rotherham! Isle after Isle of every spice you could imagine all methodically stacked they also sell cookware sacks of rice fresh curry leaves fresh turmeric etc etc! you name it and I'm sure they will stock it they also have their own butchery I've no doubt that most towns up and down the country and around the world have similar shops but this place is massive! anyone have a similar size shop/supermarket in their area

Lets Talk Curry / Re: Anyone sieve their curry base?

I've never had to strain my base if you have a decent blender either hand held or a fixed one you should
be able to get a smooth consistency.

Hi Rich you're very welcome, that's what it's all about , trying new recipes out. This is a damn good recipe , my daughter is a keen cook & she is also making it over the weekend.
Regards Bob.
P.S here are a few more images

I have made this on Thursday , I left if over night and ate it on Friday as I like the flavours to develop , I do a lot of this style of cooking , I discovered I no longer have a pressure cooker so I did it in a heavy casserole dish on the gas ring instead. I managed to get the shanks nice and tender in just two hours. It turned out really well, I really enjoyed it, highly recommended .
With this style of cooking I generally like to use fresh curry leaves which I believe gives it a bit extra flavour but that's up to you its just my personal preference.

A pinch of sugar speeds up the process mate - cook nice and slow turning to stop burning

best, Rich

Cheers Rich that's how I normally do them just wondered if I was doing them properly
I suppose I will have to be a little more patient next time
Bob.
