hi
i live in a village called Biddenden in the heart of the Kent countryside. known world wide for it's cider and chulkhurst twins. and only 3 miles from the Raja of Kent ( best restaurant in Kent 2009) and 5 miles from Mouchak my "local" ;D

hi domi these awards are done as they should be, ie based on the previous years work. i mean how can a restaurant be awarded best of 2010 when the year has only just started! the awards were handed out on 18th jan this year. although how can a restaurant be only the best restaurant and not the best takeaway when they obviously do both? ???

hi guys the above awards were presented at the ceremony at the ashford international hotel for various categories and the Raja of kent in St Michaels, Tenterden won best restaurant in kent. the owner of this restaurant own Mouchak, raja of kent in maidstone(seats 280) and a large restaurant in dartford as well. now i get on with Joy the head waiter at mouchak( incidentally i have to drive past the raja of kent ( which is 3miles away)to get to Mouchak) and the carpark is always full and i have never eaten there! :o)  and always talking with Rupon who is one of three brothers each of them are chefs that all started at Mouchak, and Raj is the eldest and boss man. they are more than happy to answer any questions i have to ask, and i have had demos with them. but as yet i have not had the opportunity to speak with Raj to ask if i could have a proper lessons following all processes from base to precooking and final dishes. as i am probably one of their best customers i will take the chance to ask! see links below checkout the raja menu aswell!

hi CA could you amend the recipe above to "Pataks Tikka paste" and not the "tikka masala" don't think they do TM in catering size, maybe wrong. but they are very different beasts.

hi CA i'm sorry haven't posted the base sauce recipe yet," that stand for" the" mix powder" and "base sauce" ref, meaning that both the mix powder and base sauce are yellower than mine.
no my sauce does not have any stock, water/oil/tomato passata are the only liquids that i/they use. i will post the Mouchak base sauce and method and chicken vindaloo/mushroom rice and bombay aloo as well, sorry guys.

hi guys just got back from Mouchak with enough of their base sauce to make 2-3 curries i took pictures of this and theirs and my mxed powder, Mouchaks is on the left and contrary to the colour shown in the pic it is slightly more yellow than mine, that stands for mix powder and base sauce

hi jerry the spice mix powder i use from Mouchak uses garam masala but only 1/2 measure.
Mouchak mix powder
6pts curry powder
4pts turmeric
2pts coriander
1pts cummin
1pt chilli powder
1/2pt garam masala

will post the rest of the recipes i have from them when i have typed them up

hi rasta its "admins new base sauce" recipe and in the same post is a recipe for a jalfrezi you could just adapt this by removing the chillies and reducing the chilli powder and you have a bhuna!
