Strange, I was under the impression that "Indian" from India was less hot and more bland.

Most of the authentic dishes I've tried seemed that way compared to BIR curry anyway...

More complex flavouring though, and seemingly more ingredients.

I still use this method and really enjoy the results, especially for Vindaloo and Madras.

Mainly I've been trying different variations of spice mix, and add a few extra goodies (coriander, carrot) when making the base.

I do need to try Dipuraja's CTM, that's next up for me.

Hey Mick - you might want to try and "report seller".

Not that whoever it is likely gives a toss.

I wonder if anyone has actually bought the recipes?

I'm really curious to see how experienced members get on with the Dipuraja curry recipes.

I'm skeptical of the "from cold" method, and get very nice results with the Taz method.

I tried the naan as a standalone and was very disappointed.

Hopeful that the curries are good. Keep me posted.

For me, naan needs instant dry yeast. Self rising flour is not good enough. I tried the Dipujara recipe and found it well below par.

Also I've found by trial and error of 200+ naans, that the high heat oven method beats the pan fry method hands down. 3 minutes under highest heat will toast the bottom and spot-char the top. Pizza stone works by far the best.

I actually haven't tried Stew's Madras or Base. I use his Jalfrezi recipe (with whatever base I have) and found it to be excellent.

I will put this one on my to-do list.

In the meantime, I use the Taz base/method with usually the BE or SnS Madras. Both are excellent.
