Same here been using it for years its quite a helpful spice, try adding a tsp to your madras gives that red colouring and adds heat as well, made a bog standard balti the other day and used tandoori masala to just give the chicken a little bit of flavour sauce was quite mild but the chicken gave it a little kick.

I used a really sweet apple (Gala) it worked well with the sweetness of the onions and (to me anyway) it just added that extra little flavour that i wanted but still got the heat.
Gave this (the madras) to 5 of my friends and they all liked it saying it was very,very moreish and they dont mince there words if it was crap they would definately say, with help from my curry tasters (25 friends) i get some really interesting comments some useful some not but i always take on board what everybody says to me.

Havent had an ABC for a while so it would be unfair to say this one is this and that one is that, so will have to have double curries the weekend (bonus), but as i can remember the texture is a little more "creamy" in the "Balti Secrets" and the smell is just right.

Really made this with some left over veg etc..
(Was going to make a stock but changed my mind).
Here we go

1 chicken carcass (ASDA already cooked and stripped)
3 medium onions chopped
1 medium carrot chopped
1 medium maris piper potato peeled and chopped
1 sweet apple cored, peeled and chopped
2 green chilli

Only made the base, tandoori masala, balti masala and balti garam masala so far, made the bog standard Chicken Balti and very impressed indeed, the smell, texture and taste is all there very nice recipes and laid out a little like "The Curry Secret", well worth a purchase if you are into your Balti's.
Will post pics when i make the Chicken Balti and the base again.

Made this using CA's Madras recipe but with my base
Added to this one is 1 tsp Tandoori Masala powder

The base is in the "Try this stage" at the moment but the recipes i have made have been quite scrummy again thanks to the recipes from CA.
If you object to these recipes CA without using your base please feel free to have them deleted, its just your recipes are just excellent to experiment with (hope i dont offend you).
The base can be used with any spicy dish Jalfrezi, Madras, Sagwala (ABC) etc..
