Last night I asked a takeaway bloke what was in the gravy

He said they put some in celery, onion, carrot, green peppers (and sometimes red too) corriander stalks, garlic paste, and ginger paste.

Pretty standard then. I personally wouldn't use celery as too much of it taints the sauce.

Interesting that there's no mention of spices. Personally I've never understood what's to be gained by having spice in the base when you'll be adding a lot more in the final dish, plus if it's present in any significant amount it must surely reduce the versatility of the base. These days I don't put any in the base and can't say that I've missed it.
Do people find spice in the base really produces a significantly different taste compared to only frying them in during cooking?

From a BIR perspective, spice in the base is needed for dishes like korma where they are the only spicing in the dish.

i ,I've been using ifindforu`s final final base recently
 my wife commented that the take aways we have when i don't cook are very samey lacking a depth of flavour that chewy tikka mentioned so i`I've bought some fresh sainsburys beef stock which i will add to the final dish on Friday i`ll let you know what its like Saturday.
